Meet The Chef – Chef Tanya Holland

Known for her inventive take on modern soul food, as well as comfort classics, Chef Tanya Holland is the executive chef-owner of the beloved Brown Sugar Kitchen restaurants, located in the San Francisco Bay Area. Author of The Brown Sugar Kitchen Cookbook and New Soul Cooking, she competed on the 15th season of Top Chef on Bravo and was the host and soul food expert on Food Network’s Melting Pot. As a chef, Holland travels extensively in pursuit of more experience and knowledge and has taught classes in France for gastronomic travelers. She is a frequent contributor to the James Beard Foundation as a writer and chef.

DAY 1 - EMBARKATION - Lisbon, Portugal

Come and sway to the enchanting rhythm of Lisbon! Nestled by the Rio Teja, this magnificent capital city extends a hearty invitation with its unique mix of architectural wonders. Picture yourself at a chic open-air café on a charming cobblestone walkway. Visualize riding an early 20th-century funicular up picturesque hills. Don’t miss the UNESCO heritage sites – the Tower of Belem and Hieronymites Monastery. Lisbon’s effortless elegance and irresistible allure will draw you into its delightful dance!

DAY 2 - Porto, Portugal

Built into the granite cliffs where the Rio Douro meets the sea, Porto is a city of hills that offers a thrilling mix of times and tastes. Medieval paths, symmetrical neighborhood plazas, and intricately designed Baroque churches coexist in harmony. The heart of Porto, a UNESCO heritage site, is an enchanting maze of meandering lanes, zigzag stairs and mosaic-adorned churches. But what makes Porto truly shine is its world-renowned port wine – a delightful byproduct from the 17th century when it was found that brandy could preserve wine for shipping. After exploring the city through your preferred shore adventures, come back to enjoy a soulful fado folk music performance onboard.

DAY 3 - El Ferrol, Spain

Once you venture into the estuary mouth, brace yourself for an exhilarating journey through a charmingly narrow canal. Prepare to be greeted by the magnificent twin castles, San Felipe and La Palma, as they roll out the red carpet to welcome you to the historic hub of the Spanish Navy during the 17th century.

Spend a delightful day exploring the bustling streets of the old Magdalena neighborhood, where surprises await at every corner. Alternatively, embark on your very own pilgrimage to the nearby UNESCO site of Santiago de Compostela, or set off to Lugo and witness the awe-inspiring Roman Walls – yet another UNESCO treasure that will leave you in awe. The possibilities are endless, and the adventures are simply waiting for you to seize them!

DAY 4 - At Sea - Cruising

While at sea, take the time to recharge before the next adventure. Lounge by the pool, be spoiled at the spa, taste the delicacies or explore the venues on-board, until we arrive at the next amazing destination.

DAY 5 - Bordeaux, France

Bordeaux, famously referred to as Sleeping Beauty or La Belle au Bois Dormant, is a city that’s both beautiful and full of life! There’s no denying its beauty, but the ‘sleeping’ tag might raise some eyebrows. It’s not just an antique treasure chest bursting with over 350 historic monuments and buildings within the city limits. It’s also the lively heart of Aquitaine, known for its buzzing cultural scene.

Wine connoisseurs would recognize Bordeaux as the entryway to some of France’s most celebrated vineyards. This UNESCO World Heritage city is a delightful mix of history and modernity, where 13th-century cathedrals rub shoulders with 18th-century palaces. And if you’re up for an adventure beyond the city limits? Head to M doc region’s stunning chateaux or visit Saint-Émilion, a jaw-dropping medieval village nestled amongst vineyards that also holds UNESCO World Heritage status.

DAY 6 - La Rochelle, France

La Rochelle is said to be the most lovely and unspoiled port city in France, and who are we to argue?  Two 14th century stone towers guard the gateway to the medieval core of the city, the Vieux Port. And this is a city that is focused on ships. You’ll find yachts floating in the Port des Minimes, ships in the stained glass of church windows, maybe even decorating the arcaded walkways that line the streets. Learn the art of brandy making with a visit to the Cognac region and the Hennessy maisson, dating back to 1765. While walking past the aging barrels, inhale the heady aroma—the escaping vapors known as “the angels’ share.”

The town’s history dates back before the epic age of Homer, but it’s the medieval wonders in Old Kotor that draw acclaim today. Marbled avenues meander with no apparent order, and, even for locals, it’s quite common to get turned around. The good news is, few places are more fun to get lost in than Kotor. Cruises to Montenegro would not be complete without sampling the local cuisine. Fresh seafood is always on the menu and the “domestic fish thick soup” is a tradition not to be missed.  Old churches, shops, and bars line the avenues, and don’t be surprised to wander upon a charming piazza right out of the blue. Come summer, the lavish yachts of the ultra-rich fill the marina, presenting a striking contrast to the rustic romance and ancient beauty of Kotor.

Once notorious as the home of pirates, St.-Malo today is better known for the UNESCO site monastery and town of Mont St. Michel and the famous oysters of nearby Cancale. Walk the city’s ramparts or pass the time at a seaside boulangerie sampling a fresh and buttery croissant. 

DAY 9 - At Sea - Cruising

Here, the dining room manager seats you, but where is your decision. When you dine and with whom are entirely up to you. Seating usually begins at 6:30 pm and will be prined in the ship’s daily program. Each delightful dish is prepared exactly to your liking – an exquiste dinner served course-by-course with a fine selection of vintage wines.

Here’s the perfect place to dine under the stars. Candles is Windstar’s signature outdoor restaurant transformed by night into a dreamlike paradise. Delectable cuisine, memorable surroundings, inspired wine pairings.

Savor flavors of Spanish local culture as you dine in intimate surroundings that encourage sharing and camaraderie by ten-time Michelin-starred Chef Anthony Sasso. With seating for 38 including a chef’s counter and communal table, it’s an inventive take on modern Spanish cuisine.

 

 

One of the highligts of your cruise will be the spectacular onboard barbecue. Your attentive crew will serve an amazing meal of international cuisines accompanied by thier own special brand of entertainment for an evening of entertainment under the stars. 

 

You’ll find all your traditional grilled and barbecued favorites (and discover new dishes from around the world) in our new casual outdoor restaurant brought to you in partnership with global grilling authority, Steven Raichlen.

 

 

It’s breakfast alfresco, full service or buffet-style, anytime till 9:30 am. No need to hurry. Again, the choices are many in Veranda. Choose the sumptuous, seemly endless buffet. Or, order from the lunch menu between noon and 2:30pm.
